rijo42 Recipe – Red Velvet Cupcakes with rijo42 Espresso Buttercream
Everyone knows cupcakes are the way to the heart and what says ‘I love you‘ better than red velvet cupcakes?
We’ve topped ours with a rijo42 espresso buttercream for the energy boost everyone needs on Valentines Day.
Red velvet cake mix (we used Betty Crocker as it’s our fave!)
100ml vegetable oil
1 cup of butter
2 cups icing sugar
1 rijo42 single espresso
Preheat oven to 180 degrees celsius.
In a mixing bowl, add your red velvet cake mix.
Divide the mixture evenly into your cupcake tray.
Bake for 20 mins in pre-heated oven.
While cupcakes are baking, get started with the rijo42 espresso buttercream.
Add buttercream ingredients into a mixing bowl, adding icing sugar gradually.
Add a single rijo42 espresso to the buttercream – if you want it stronger just add another rijo42 espresso!
Using a spoon, add the rijo42 espresso buttercream to the cupcakes and top with your favourite toppings.
