If you’ve been abstaining from chocolate or coffee for Lent, then this is the perfect recipe to enjoy this Easter. Lovely light cappuccino sponge topped with white chocolate butter cream frosting and mini milk chocolate eggs, pure indulgence. Enjoy a slice with a delicious chocolate caramel latte.
Ingredients – serves 20
300g butter (unsalted) at room temperature plus extra for greasing
250g self-raising flour plus extra for dusting
200g caster sugar
3 large eggs – beaten
1 ½ tsp baking powder
50ml whole milk
1 tsp vanilla extract
125g white chocolate
125ml double cream
2 tbsp espresso – cooled
75g icing sugar sifted with extra to dust
Preheat the oven to 180°C (conventional oven) 160°C (fan assisted) or Gas Mark 4
Take an 8” cake tin and dust it with self raising flour
Place the caster sugar and 175g of the butter into a mixing bowl and beat together until white and creamy. Slowly add the eggs in stages, beating well in between each stage
Fold in the remaining self raising flour, add the baking powder, milk and vanilla extract and fold into the mixture. Spoon the mixture into the dusted cake tin and smooth to a level surface
Bake in the oven for 40-50 mins – cake is perfect when a skewer inserted into the middle of the cake comes out clean, remove from the oven. Leave the cake to cool for 5 mins after removing from the oven then turn out onto a wire rack and leave to cool completely. Once the cake has cooled cut into halves.
Grate 25g of white chocolate and place into a bowl with the double cream and espresso. Whisk together until the mixture holds soft peaks then spread a nice thick layer over one of the cake halves, then place the other cake half on top.
Place a heat proof bowl over a pan of simmering water and add the remaining white chocolate and melt gently. Once melted leave to cool for around 10 mins. In another bowl beat together the icing sugar with the remaining butter until white and creamy then add the cooled white chocolate and whisk again. Spread the mixture all over the top and sides of the cake, decorate the top with milk chocolate eggs and dust with icing sugar.
