As it’s St Patrick’s Day on Sunday, we thought we’d share this recipe with you as an alternative to the customary pint of Guinness. This is the ultimate Irish coffee but not as the kind of Irish coffee you’re thinking of with floating cream, it’s an iced coffee cocktail. It couldn’t be simpler to make, creating a sophisticated coffee cocktail for those St Patrick’s Day celebrations.
Ingredients – serves 2
2 double espresso – cooled
50ml Jamesons Irish Whiskey or equivalent
2tbsp Irish Whiskey Liqueur
2tbsp Baileys Irish Cream Liqueur or equivalent
2tsp sugar syrup
8 fresh mint leaves to garnish
Add the espresso, Jamesons, Irish Whiskey Liqueur, Baileys and sugar syrup into a cocktail shaker. Add two scoops of crushed ice and shake well.
Strain the mixed cocktail into two martini glasses. To garnish, twist four of the mint leaves together for each cocktail to produce four leaf mint clovers and add to each glass. Enjoy St Patrick’s Day.
