Shrove Tuesday Coffee & Chocolate Pancake Recipe

Well, its the 11th February and by now we should have all decided what we plan to give up for Lent. Shrove Tuesday or ‘Pancake Day’ is the last chance to indulge before we attempt to live without that ‘certain something’ for 40 days. This recipe provides the ultimate treat to enjoy before Lent begins.

Coffee, Chocolate & Hazelnut PancakesIngredients – Makes 4-6 pancakes

340g/8oz plain flour
1 tsp finely ground rijo42 coffee
3 tbsp Nutella Chocolate & Hazelnut Spread
1 tbsp granulated sugar
42g/1½ oz butter – melted
300ml/10fl oz milk
3½ tsp baking powder
1/4 tsp salt
1 large free-range egg
Vegetable oil for frying
Cocoa powder for dusting

 

 

 

 

Preparation Method

Sift the plain flour, coffee, sugar, baking soda and salt together in a large mixing bowl and stir to combine. Make a well in the centre and add melted butter, egg and milk, whisk the mixture until smooth, add the Nutella and whisk until a smooth batter consistency is achieved.

Place a large frying pan, lightly oiled over a medium heat. Place a ladleful of the batter into the centre of the pan and swirl around until the base of the pan is covered. Cook pancakes for around 30-40 seconds each side.

Delicious served with whipped cream or vanilla ice cream. Drizzle with chocolate sauce, dust with cocoa powder and garnish with fresh strawberries. Enjoy.
